BEST LOVED EGG & CHEESE SAUCE

2 - 3 tablespoons butter
1 heaped tablespoon flour
Milk as needed
1 cup grated yellow cheese
Salt & pepper
Boiled eggs to serve

1 cup grated yellow cheese

Boiled eggs to serve
Directions:
1: Melt butter in a small pot, add flour, and stir over medium heat till blended.
2: Gradually add milk and continue stirring until it thickens a little.
3: Add grated cheese, stir till melted and is a reasonably thick consistency, then season with salt and black pepper.
4: Slice boiled egg onto toast and pour over the cheese sauce.
COOK'S NOTES: Adjust quantities according to how many people to serve. Just keep the proportions the same. Use a sharper cheese like cheddar for best results.
