Rainbow Brown Rice Salad

Everyone Loves A Rainbow
The rainy season is many months away but today, as we celebrate love, I'm giving you a rainbow.
There are multiple reasons to serve up this wonderfully vibrant Rainbow Rice Salad.
It's perfectly parve which is always vital, it combines fresh produce with a base of brown rice so you don't have to deal with sun-stricken, wilting lettuce, it delivers make-ahead convenience and, most importantly, it's ultra-healthy and absolutely delicious.Ingredients
2 cups cooked brown rice (I like brown Basmati)
2 cups fresh nectarines, cubed
1 cup celery, finely chopped
1/2 cup red pepper, chopped
1/4 cup parsley, chopped
1/2 cup raisins
1/2 cup sunflower seeds
Chopped spring onion to garnish
DRESSING
3 tablespoons canola oil
2 tablespoons lemon juice
3 tablespoons Soya sauce
1 tablespoon curry powder
1 tablespoon honey
Directions
Whisk dressing ingredients together and toss through salad ingredients with rice.
Serve on its own or with cooked fish, cold chicken or cold meats
